Beurre Maine is a thickening agent. This is a French cooking technique. Beurre Maine is a mix of equal parts of butter and flour. This thicken agent thickens soups and sauces with making lumps in the liquid. This property of not creating lumps in liquids makes it desirable to use.

  Butter 1⁄4 Cup (4 tbs)
Directions

1. Mix flour and butter together.
2. Stir it until it forms a smooth mixture.
