Cinnamon Normandy Omelette
|Apple||1 Small, sliced|
|Ground cinnamon||1 Dash|
|Eggs||4 , separated|
Set Power Select at HIGH.
In small glass bowl, combine apple, 1 tablespoon butter, honey and cinnamon.
Heat, covered, 3 to 4 minutes or until apples are tender; reserve, In 9-inch glass pie plate, heat remaining butter 1/2 to 3/4 minute or until melted; turn plate to coat bottom with butter.
Meanwhile, beat egg whites until stiff, but not dry; beat egg yolks, salt and pepper until thickened.
Fold egg yolks into egg whites; carefully pour mixture into pie plate.
Set Power Select at MEDIUM.
Heat 4 to 5 minutes; let STAND 2 minutes.
With spatula, loosen edges of omelet from plate; spoon apples onto half.
Fold other half omelet over apples; sprinkle, if desired, with confectioners sugar.
