Crunchy French Fried Onion Rings
|Onion||1 Large, cut in 1/4 inch slices|
|Pancake mix||1 Cup (16 tbs) (Packaged)|
|Cooking oil||1 Tablespoon|
Separate onion into rings.
Combine pancake mix, salt, and 3/4 cup cold water in bowl.
Beat about 2 minutes.
Dip onion rings in batter; drain.
In skillet that is at least 3 inches deep, heat 116 inches of oil to 375°.
Fry onion rings till brown, 2 or 3 minutes.
Drain thoroughly on paper toweling.
