Prune Cheese Souffle
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Eggs||4 , separated|
|Cottage cheese||1 Cup (16 tbs), sieved|
|Dairy sour cream||1 Cup (16 tbs)|
|Fresh lemon juice||1 Tablespoon|
Cream butter and sugar until light.
Beat in egg yolks.
Add prunes, cheese, cream, and lemon juice; mix well.
Beat egg whites with salt until stiff but not dry.
Fold into first mixture.
Pour into buttered 2-quart baking dish and bake in pan of hot water in preheated moderate oven (350°F.) for 1 hour, or until firm.
Serve with whipped cream.
