Broiled French Fries

Ingredients
  Baking potatoes 4 Ounce, scrubbed and cut into 8 wedges each (6 Small Ones)
  Butter 2 Tablespoon
  Freshly grated parmesan cheese 1 Ounce (1/4 Cup)
  Salt To Taste
  Pepper To Taste
Directions

1. Preheat the broiler. Line a broiler pan with aluminum foil. Bring a large pot of water to a boil over high heat.
2. Drop the potatoes into the boiling water and partially cover the pot. When the boil returns, cook for 4 minutes; drain. Toss in a large bowl with the butter.
3. Arrange the potato wedges in a single layer on the prepared pan. Sprinkle with half of the Parmesan. Broil for 5 to 10 minutes, until deep golden brown. (The time can vary significantly from broiler to broiler so judge by color.) Turn the potatoes and sprinkle with the remaining Parmesan. Broil for 5 to 8 minutes longer, until deep golden brown. Serve hot, with salt and pepper to taste.
