Microwave Tomato Ratatouille

Ingredients
  Eggplant 1⁄2 Pound, cut into 1/2 inch cubes
  Garlic 1 Clove (5 gm), minced
  Onion 1 Small, sliced and separated into rings
  Zucchini 1 Small, thinly sliced
  Green pepper 1⁄2 Medium, cut into thin strips
  Stalk celery 1 , chopped
  Tomato 1 , cut into wedges
  Pepper 1 Dash
  Salt 1⁄4 Teaspoon
  Basil leaves 1⁄4 Teaspoon
  Oregano leaves 1⁄4 Teaspoon
  Thyme leaves 1⁄8 Teaspoon
  Grated parmesan cheese 1 Tablespoon
Directions

Combine all ingredients in 2-qt casserole; cover.
Microwave at High 7 to 10 minutes, or until eggplant is translucent, stirring 2 or 3 times.
