Easy Veal Fricassee

Ingredients
  Boneless veal 1 1⁄2 Pound
  Drippings/Margarine / shortening / butter 2 Tablespoon
  Salt 1 Teaspoon
  Water/Bouillon 1 1⁄2 Cup (24 tbs)
  Carrots 4 , diced
  Onions 3 , sliced
  Diced celery 1⁄2 Cup (8 tbs)
  Potatoes 4 , peeled and sliced
Directions

1. Wipe the veal with a clean, damp cloth and cut in 1-inch dice.
2. Brown the meat in a large heavy saucepan in the hot drippings. Sprinkle with salt, add water, cover and simmer 1 hour.
3. Add carrots, onions, celery and potatoes in layers and simmer 30 minutes or longer. Remove the vegetables to a warmed platter. Pour the meat and liquid into the center.
