Spicy Mushrooms A La Grecque

Ingredients
  Button mushrooms 18 Ounce (500 Gram)
  White wine 4 Fluid Ounce (120 Milliliter)
  Olive oil 30 Milliliter (2 Tablespoon)
  Tomatoes 3
  Onion 1 Small
  Coriander seeds 10
  Thyme sprig 2
  Bay leaves 2
  Lemon 1 , juiced
  Salt To Taste
  Pepper To Taste
Directions

1. Trim off the earthy base of the mushrooms and wash. Keep them whole.
2. In a large saucepan, bring some water to the boil. Plunge the tomatoes in the water for 10 seconds. Drain, peel, remove the seeds, then mash with a fork.
3. Peel the onion and slice thinly. Put the oil into a saucepan over a low heat. Add the onion, mushrooms, tomatoes, bouquet garni, wine and coriander seeds. Season with salt and pepper. Simmer, uncovered, for 20 minutes.
4. Pour the ingredients into a salad bowl, having removed the bouquet garni. Squeeze the lemon juice over the salad. Serve cold.
