Sole Meuniere

Ingredients
  Fresh flounder/Sole fillets 2 Pound
  Salt 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  All purpose flour 1⁄2 Cup (8 tbs)
  Butter 3 Tablespoon
  Vegetable oil 3 Tablespoon
  Sliced almonds 1⁄3 Cup (5.33 tbs)
  Chopped parsley 1⁄4 Cup (4 tbs)
  Fresh lemon juice 2 Tablespoon
Directions

1. Pat the fish fillets dry with paper toweling. Combine the salt, pepper and flour in a large bowl. Dip the fillets in the seasoned flour to coat.
2. Melt the butter with the oil in a large skillet over medium-high heat. Heat until the oil is very hot but not smoking. Fry the fish fillets, a few at a time, until golden brown, for about 1 minute per side. Remove the fillets to a warm serving platter and keep warm.
3. Add the almonds to the skillet. Lower the heat to low; saute the almonds until lightly golden, for about 45 seconds. Add the parsley and the lemon juice; swirl to evenly combine the ingredients in the skillet. Pour the sauce over the fish.
