Potato Souffle

Ingredients
  Onion 4 Tablespoon, chopped
  Butter 3 Tablespoon, melted
  Milk 1 Cup (16 tbs)
  Flour 2 Tablespoon
  Eggs 2 (separated)
  Potatoes 3 Cup (48 tbs), leftover mashed
  Salt To Taste
  Pepper To Taste
Directions

Brown onion in butter, add flour and then milk.
Add yolks and sauce to potatoes and mix well.
Then fold in beaten egg whites.
Bake in greased oven dish about 25 or 30 minutes at 350°F.
