Seafood Au Gratin
|Mushrooms||1⁄2 Pound, sliced|
|Whole shallot||1 , chopped|
|Heavy cream||3⁄4 Cup (12 tbs)|
|Black pepper||To Taste|
|Crab meat||1⁄2 Pound, cooked|
|Lobster meat||1⁄2 Cup (8 tbs), cooked|
|Large shrimp||1⁄2 Pound, cooked and peeled|
|Parmesan cheese||1⁄4 Cup (4 tbs)|
Set oven to 450°F
1. In a medium skillet, saute mushrooms and shallots in butter for five minutes.
2. Beat egg yolk into cream and add to skillet slowly, stirring constantly. Remove from heat when thickened and stir in brandy. Season with salt, pepper, and paprika., to taste
3. Place crab meat, lobster meat, and shrimp in a shallow, buttered casserole dish. Cover with the mushroom-cream sauce and sprinkle with cheese. Bake at 450°F for 10 minutes, then brown under broiler (2-3 minutes).
