1. Bring the milk to boil, remove from fire and drop the bread gradually stirring vigorously with a wooden spoon.
2. Beat well. Add seasoning and leave to cool, stirring occasionally.
3. Add the cheese and well beaten yolks.
4. Lastly fold in stiffly beaten whites.
5. Pour into deep fire-proof dishes and bake in a moderate oven till set.
