|Boiled potatoes||1 Pound|
|Butter||1 1⁄2 Tablespoon|
|Egg yolks||3 , beaten|
|Freshly ground black pepper||To Taste|
|Grated cheddar cheese||4 Tablespoon|
|Egg whites||4 , stiffly beaten|
Mash potatoes well with butter and cream.
Add the beaten egg yolks, season to taste and stir in most of the cheese, retaining a little for the topping.
Preheat the oven to 375°F.
Fold in stiffly beaten egg whites.
Pour into a buttered souffle dish and sprinkle with the remaining cheese.
Bake for 25 minutes and serve immediately from the souffle dish.
