Sweet Potato Souffle

  Sweet potatoes 1 1⁄2 Pound
  Ground nutmeg 1 Dash
  Pepper 1 Dash
  Onion 2 Tablespoon, chopped
  Butter 1⁄4 Cup (4 tbs)
  All purpose flour 1⁄4 Cup (4 tbs)
  Salt 1 Teaspoon
  Milk 3⁄4 Cup (12 tbs)
  Egg yolks 4 , beaten
  Egg whites 4

In a saucepan cook sweet potatoes in boiling water for 30 to 40 minutes or till tender.
Peel sweet potatoes; mash.
Measure 2 cups, set aside.
In a saucepan cook onion in butter or margarine till tender but not brown.
Blend in flour, salt, nutmeg, and pepper.
Stir in milk.
Cook and stir till mixture thickens and bubbles.
Stir in mashed sweet potatoes; mix well.
Add half of the hot mixture to egg yolks, stirring constantly.
Return to remaining hot mixture; mix well.
Set aside.
In large mixer bowl beat egg whites till stiff peaks form.
Fold into potato mixture.
Spoon into 1 1/2-quart souffle dish.
Bake in a 350°F oven for about 45 minutes or till a knife inserted just off-center comes out clean.
