Light Chicken Cordon Bleu
|Seasoned dry bread crumbs||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||1 Tablespoon|
|Chopped fresh parsley||1 Teaspoon|
|Fresh boneless skinless oven stuffer roaster thin breast||1 Pound, thinly sliced (1 Package Perdue Fit 'N Easy)|
|Low fat swiss cheese slices||6 Ounce (1 Package)|
|Turkey ham slices||6 Ounce (1 Package)|
|Egg white||1 , beaten|
Microwave Directions: In shallow bowl, combine first four ingredients.
On each chicken breast slice, place 1 slice Swiss cheese and 2 overlapping slices ham; roll up, jelly-roll style, and secure with toothpick.
Dip rolls in egg white, then coat with bread crumb mixture.
In microwavable dish, arrange chicken rolls, seam sides down, in circular pattern.
Cover with waxed paper; microwave at MEDIUM-HIGH (70% power) 5 minutes.
Rearrange rolls; cover with double thickness of paper towels.
Microwave at MEDIUM-HIGH 8 minutes.
Let stand, uncovered, 5 to 10 minutes.
