Ratatouille With Tomato Puree

Ingredients
  Olive oil 2 Tablespoon
  Garlic 2 Clove (10 gm), crushed
  Onions 2 Large, sliced
  Aubergines 2 , sliced
  Courgettes 6 , sliced diagonally
  Green pepper 1 , cored, seeded and sliced
  Tomatoes 1 1⁄2 Pound, skinned and sliced (750 Gram)
  Tomato puree 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Heat the oil in a pan, add the garlic and onions and cook for 5 minutes, stirring occasionally.
Add the aubergines, courgettes and pepper and stir in the tomatoes.
Season with salt and pepper to taste, bring to the boil and simmer for 20 minutes.
Add the tomato puree and cook for 10 minutes.
Serve hot or cold.
