Sole Florentine

Ingredients
  Frozen chopped spinach 20 Ounce (2 Packages, 10 Ounce Each)
  Dry minced onion 2 Tablespoon
  Grated lemon peel 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Dry mustard 1⁄2 Teaspoon
  Grated parmesan cheese 2 Tablespoon
  Parsley flakes 1 Teaspoon
  Paprika 1⁄2 Teaspoon
  Sole fillets 1 Pound
Directions

Place spinach packages in oven.
Microwave at High 6 to 6 1/2 minutes, or until package flexes easily.
Rearrange once.
Drain spinach well.
Place in 8 x 8-in baking dish.
Stir in onion, lemon peel, salt, pepper and dry mustard.
Spread spinach mixture evenly over bottom of baking dish.
Combine Parmesan, parsley and paprika.
Set aside.
Place fish on top of spinach mixture.
Cover with wax paper.
Microwave at High 4 minutes; rearrange and sprinkle with Parmesan mixture.
Cover.
Microwave at High 2 to 6 minutes, or until fish flakes easily.
