Mock Hollandaise Sauce
|Plain flour||25 Gram|
|Dried egg powder||30 Milliliter|
|Lemon juice||45 Milliliter|
|Cayenne pepper||To Taste|
1. Melt the butter in a small saucepan, add the flour and cook for 2 minutes. Gradually blend in the milk and bring to the boil. Cook for 3 minutes.
2. Blend the dried egg and lemon juice to a smooth cream. Stir into the sauce and season with cayenne and salt. Reheat without boiling. Serve with grilled, steamed or fried fish or vegetables.
