Simple Ratatouille With Bacon
|Aubergines||4 Small (Eggplant)|
|Pepper||1 (Red / Green)|
|Bacon fat/Rind from gammon||1 Teaspoon (Leveled) (A Little)|
|Garlic||2 Clove (10 gm), crushed|
|Chopped parsley||2 Tablespoon (For Garnish)|
Chop the onions and skin the tomatoes, cut the latter in half, sprinkle with salt and leave upturned to drain.
Peel the marrow, cut in large chunks, remove the stalk of the aubergines, cut in half, scoop out slightly and cut into chunks.
De-seed and slice the pepper.
Heat the fat or rind in a strong pan and gently fry the onions and the crushed garlic.
Add the aubergines, marrow, tomatoes and pepper.
Season well and simmer slowly, with well-fitting lid on the pan, until the vegetables are tender.
Serve sprinkled with parsley.
