Lobster Bisque

Ingredients
  Lobster/1 small lobster 1⁄2 Large
  Fish stock/Water 1 Pint
  Lemon juice seasoning with paprika 1 Teaspoon
  Pepper To Taste
  Flour 1 Ounce
  Milk 1⁄2 Pint
  Margarine/Butter 2 Ounce
  Single cream 2 Tablespoon
  Paprika To Taste (For Garnish)
Directions

Remove the flesh from the lobster and cut into small pieces.
Save a few of the pieces for garnish.
Put the shell, well washed and crushed, into a large saucepan.
Cover with the stock or water, add the lemon juice and simmer gently for 30-35 minutes.
Strain carefully through a fine sieve and return to the pan together with lobster meat and seasoning.
Blend the flour with the milk and stir this into the soup together with the margarine or butter.
Bring slowly to the boil and cook, stirring all the time until thickened.
Add the cream, reheat and serve.
Garnish with paprika pepper and the whole pieces of lobster.
This is a thick soup, ideal for serving at parties.
