|Canned plums/1 1/2 pound fresh plums, poached||26 Ounce, drained and sliced (1 Can Of 1 Pound 10 Ounce Or 825 Grams)|
|Caster sugar||4 Ounce (125 Gram)|
|Single cream||4 Fluid Ounce (125 Milliliter)|
|Plain flour||1 Tablespoon|
|Lemon juice||2 Tablespoon|
1. Preheat oven to 180°C (350° F/ Gas 4). Butter a 23cm (9 in) flan dish; arrange the plums on the base as evenly as possible.
2. Combine the whole egg and yolks with the sugar in a mixing bowl. Beat with a hand-held electric mixer until creamy. Add the cream, flour and lemon juice and mix well.
3. Pour the mixture over the plums, taking care not to disturb them. Bake for 30 minutes or until the top is golden. Serve dusted with sifted icing sugar if liked.
