French Fried Green Peppers
|Green pepper||1 Pound, washed (4 large, seeded)|

|Bread crumbs||3⁄4 Cup (12 tbs)|
|Oregano||1⁄2 Teaspoon, ground|
|Parmesan cheese||2⁄3 Cup (10.67 tbs), grated|
|Water||1⁄4 Cup (4 tbs)|
With electric knife, cut green peppers into rings 1/2 inch thick; then cut each ring in half or into thirds, depending on size.
Combine crumbs, salt, oregano, pepper and cheese in small mixing bowl.
Beat eggs and water together in another small bowl.
Dip green pepper slices into crumbs, then into egg mixture and again into crumbs.
Chill 1 hour.
Fry in skillet in 1/2 inch hot oil (375°) until tender and lightly browned on all sides.
Drain on absorbent paper.
