Puffy French Toast

Ingredients
  Day old bread slice 12
  Softened butter 2 Ounce
  Brown sugar 3⁄4 Cup (12 tbs)
  Sifted all purpose flour 1 3⁄4 Cup (28 tbs)
  Salt 1⁄2 Teaspoon
  Baking powder 1 1⁄4 Teaspoon
  Eggs 2 , separated
  Milk 1 Cup (16 tbs)
  Melted butter 3 Tablespoon
  Fat 2 Cup (32 tbs) (For Frying)
Directions

Spread each slice of bread with butter and sprinkle half of the slices with brown sugar, two tablespoons to a slice.
Cover with the remaining slices, butter side down, sandwich fashion, and cut into quarters.
Sift dry ingredients into bowl.
Drop egg yolks on to flour, then add milk and butter.
Beat with a rotary beater until smooth.
Fold in stiffly beaten egg whites.
Dip each sandwich into batter until well covered.
Heat fat in skillet to a depth of 1 inch.
Fry sandwiches over medium heat in hot fat until browned on each side.
Turn once during cooking.
Serve sprinkled with confectioners' sugar if desired.
