Celery Hearts With French Vinaigrette

Ingredients
  Celery hearts 8 (Use White Stalks Only)
  Wine vinegar 3 Tablespoon
  Dijon mustard 1 Tablespoon
  Dry shallot 2 Tablespoon, peeled and chopped
  Olive oil 9 Tablespoon
  Chopped fresh parsley 1 Tablespoon
  Lemon juice 1 Tablespoon (Extracted From 1 Fruit)
Directions

Cook celery hearts in salted, boiling water for 20 minutes. Drain well and transfer to serving platter.
Place vinegar, mustard and shallot in bowl. Season with salt and pepper. Add oil in thin stream, mixing constantly with whisk.
Season celery hearts and sprinkle with lemon juice.
Pour vinaigrette over celery hearts while still warm. Sprinkle with parsley and serve.
