French Onion Soup
|Butter||1⁄4 Cup (4 tbs)|
|Onions||4 , thinly sliced|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Beef stock||4 Cup (64 tbs)|
|Dry white wine||1⁄4 Cup (4 tbs)|
|French bread slice||4 , toasted|
|Shredded gruyere cheese||8 Ounce (2 Cups, 250 Gram)|
In large heavy saucepan, melt butter over medium-low heat; cook onions until tender, about 10 minutes. Sprinkle with flour; cook, stirring, for 5 minutes. Gradually add beef stock and wine, stirring constantly; simmer gently for 15 minutes. Season with salt and pepper to taste.
Pour soup into 4 ovenproof soup bowls. Place 1 slice French bread in each; sprinkle with cheese. Broil 3 inches (7 cm) from heat until cheese is golden brown and bubbling.
