Potatoes Anna

Ingredients
  Potatoes 5 Large, sliced (peeled)
  Clarified butter 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Soak potato slices in cold water for 18 minutes. Drain and dry slices using clean cloth.
Preheat oven to 400 °F (200 °C).
Generously butter a cast iron frying pan. Beginning at outside edge of pan, arrange potato slices in an overlapping circle until bottom is covered. Brush slices with clarified butter and
season.
Make a second circle of potatoes using same technique. Be sure that slices also overlap those of first circle. Brush with clarified butter and season.
Repeat to use all potato slices. Be sure to brush with butter and season between circles.
Use a spatula to press potatoes down. Place sheet of waxed paper on potatoes and cover pan. Cook 3 minutes over medium heat.
Transfer pan to oven and cook 40 minutes.
Unmold upside-down and serve. Garnish with chopped fresh parsley, if desired.
