Mousseline Sauce

Ingredients
  Egg 2
  Egg yolk 2
  Sugar 6 Tablespoon
  Sherry/Fruit juice 1⁄4 Cup (4 tbs)
Directions

Put all the ingredients in the top of a double boiler and whisk over hot but not boiling water, until sauce is thick and frothy.
Do not overcook or it will separate.
Serve warm.
Note: try not to make this sauce more than 15 minutes before serving.
If it has to be prepared in advance, whisk it again for 1 minute before serving.
