Pasta with Brie
|Tricolor fusilli||1 Pound|
|Olive oil||1 Cup (16 tbs)|
|Garlic||3 Clove (15 gm), finely chopped|
|Tomatoes||3 , peeled, seeded, julienned|
|Chopped fresh basil||1 Cup (16 tbs)|
|Brie||1 Pound, chopped with rind|
1. In a pot of salted boiling water, cook fusilli about 10 minutes, until al dente. Drain.
2. In a large skillet, heat 1/2 cup (125 ml) of the oil, add garlic and saute until golden. Add tomatoes and basil and cook 2 minutes.
3. Add Brie, pasta and remaining 1/2 cup (125 ml) oil, toss thoroughly. Serve just as Brie begins to melt.
