Sponge Gateau

Ingredients
  7 inch sponge cake 2
  Sherry/Fruit juice 3 Tablespoon
  Ice cream 500 Gram (Family Block, Flavor As Desired)
  Double cream 1⁄4 Pint, whipped and sweetened
  Fruit 1 Pound (For Garnish)
Directions

Place one round of sponge on the serving dish and sprinkle with sherry or juice.
Cut out the centre of the other round, leaving a 1-in border all round.
Place the border on the prepared base.
Cut the ice cream quickly into chunks and pile into the hollow.
Decorate the border and sides of the sponge with stars of whipped cream and suitable pieces of fruit.
Serve at once.
