Crabmeat & Mushroom Bisque

Ingredients
  Butter/Margarine 6 Tablespoon
  Chopped onion 4 Tablespoon
  Chopped green pepper 4 Tablespoon
  Scallion 1 , finely chopped
  Chopped parsley 2 Tablespoon
  Mushrooms 1 Cup (16 tbs), sliced
  Flour 2 Tablespoon
  Milk 1 1⁄2 Cup (24 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Ground mace 1⁄4 Teaspoon
  Tabasco 1 Dash
  Half and half 1 Cup (16 tbs)
  Cooked crabmeat/12 ounce package frozen crabmeat, thawed 1 1⁄2 Cup (24 tbs)
  Dry sherry 3 Tablespoon
Directions

In medium skillet, heat 4 tbs butter.
Add the onion, green pepper, scallion, parsley & the mushrooms.
Saute' until soft but not brown; set aside.
In large saucepan, heat remaining 2 tbs butter, remove from heat.
Stir in the flour and gradually add milk.
Cook, stirring constantly, until thickened and smooth.
Stir in salt, pepper, mace and tabasco.
Add sauteed' vegetables and Half & Half.
Bring to boiling, stirring constantly.
Reduce heat and add crabmeat.
Simmer, uncovered, 5 minutes.
Just before serving, stir in sherry.
