Louise's Marmalade Souffle
|Marmalade||4 1⁄2 Tablespoon (Stiff)|
|Confectioners sugar||6 Tablespoon|
Beat egg whites stiff.
Fold in sugar and marmalade.
Place in top of large double boiler which has been very thoroughly greased.
Put a piece of greased paper on top and place lid of boiler on tightly.
Steam for 1 1/4 hours.
Turn out on serving dish and bring to table immediately.
