French Fried Spinach Balls

Ingredients
  Chopped cooked spinach 2 Cup (32 tbs)
  Butter 2 Tablespoon
  Grated onion 2 Tablespoon
  Grated cheese 2 Tablespoon
  Salt To Taste
  Eggs 2 (1 Beaten With Spinach, 1 Reserved)
  Bread crumbs 1 Cup (16 tbs)
  Allspice 1⁄8 Teaspoon
  Water 1⁄4 Cup (4 tbs)
  Bread crumbs 1 Cup (16 tbs) (Adjust Quantity As Needed)
Directions

Combine chopped spinach, melted butter, salt, pepper, 1 well-beaten egg, bread crumbs, onion, cheese, and allspice and mix well.
Allow to stand 10 minutes, then make into balls.
Combine the other egg with the 1/2 cup water and beat until well blended.
Roll the spinach balls in bread crumbs, dip in egg mixture (from the extra egg); then again in bread crumbs.
Fry in hot deep fat until a golden brown.
Drain on absorbent paper.
