Avocado Grapefruit Souffle
|Lime flavored gelatin||1 Tablespoon (1 Package)|
|Boiling water||1 Cup (16 tbs)|
|Cold water||1⁄2 Cup (8 tbs)|
|Lemon juice||1 1⁄2 Tablespoon|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Chopped green pepper||2 Tablespoon|
|Diced grapefruit sections||1 Cup (16 tbs), drained|
|Avocado pulp||1⁄2 Cup (8 tbs)|
Dissolve gelatin in boiling water.
Stir in cold water, lemon juice, mayonnaise, and salt.
Turn into freezing tray.
Freeze 15 to 20 minutes, or till firm about 1 inch from edge but still soft in center.
Turn into bowl and whip with rotary beater until fluffy.
Fold in green pepper, fruit.
Pour into 1-quart mold; chill till firm (30 to 60 minutes)
