Easy Duchess Potatoes
|Egg||1 , beaten|
|Potatoes||4 Medium, mashed (cooked)|
Beat 1 tablespoon of the butter, egg, salt, and pepper to taste into mashed potatoes.
Using pastry bag with large star tip, pipe 2-inch rosettes onto greased baking sheet.
Melt remaining 2 tablespoons butter; drizzle butter atop potato rosettes.
Bake at 500° for 10 to 12 minutes.
