Salmon Souffle With Yellow Sauce

Ingredients
  Salmon 1 Cup (16 tbs)
  Salt 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Milk 1⁄2 Cup (8 tbs)
  Bread crumbs 1⁄2 Cup (8 tbs)
  Eggs 4 , seperated
  Yellow sauce 1 Cup (16 tbs)
Directions

Remove all bones from salmon.
Chop fine and add seasonings.
Heat milk and bread crumbs together for 5 minutes; add egg yolks and salmon.
Beat egg whites stiff and fold into salmon mixture.
Turn into a buttered baking dish.
Set dish in pan of hot water.
Bake in a 350° oven until firm.
