Ingredients
  Carrots 3 , peeled and diced
  Green beans 1⁄2 Pound, sliced (225 Grams)
  Green peas 1⁄2 Pound (225 Grams)
  Cauliflower 1⁄2 Small, in florets (In Florets)
  Cucumber 1 , diced
  Pepper To Taste
  New potatoes 12
  Fresh mint sprigs 1
  Green onions 4 , finely diced
  Parsley 15 Milliliter, chopped (1 Tablespoon)
Directions

GETTING READY
1 Wash the new potatoes, leaving the skins on.

MAKING
2 In a pan, bring the potatoes to a boil and cook for 20 minutes (or microwave, covered, in 1 tsp (5 mL) water on HIGH for 5-8 minutes.
3 In another pan, boil or steam carrots and cauliflower together until just tender, about 10 minutes (or microwave, covered, with 1 tsp (5 mL) water on HIGH 5 minutes).
4 Halfway through cooking, add peas and beans to the carrots and cauliflowers.
5 Let stand and allow to cool.
6 Slice or dice the potatoes.
7 In a salad bowl, combine vegetables with pepper and potatoes
6 Place in the refrigerator and chill.

SERVING
7 Serve with a dressing you prefer.
