Potage Creme De Tomates

Ingredients
  Sweet butter 4 Tablespoon
  Olive oil 1 Tablespoon
  Yellow onion 1 Medium, peeled and thinly sliced
  Garlic 1⁄4 Teaspoon, minced
  Ripe tomatoes 3 Large, coarsely chopped (4 To 5, If Small)
  Tomato paste 3 Tablespoon
  All-purpose flour 4 Tablespoon
  Chicken stock 2 1⁄2 Cup (40 tbs)
  Granulated sugar 1⁄2 Teaspoon
  Salt To Taste
  Thyme 1⁄2 Teaspoon (Don’T Use Basil)
  White pepper To Taste, freshly cracked
  Heavy cream 1 Cup (16 tbs)
Directions

MAKING
1) In a saucepan, heat 2 tablespoons butter with olive oil.
2) Sauté the onion and garlic for 5 minutes.
3) Mix in the tomatoes and tomato paste.
4) Allow to cook for 2 to 3 minutes.
5) Stir in the flour using a wooden spatula.
6) Add stock, sugar, salt, thyme, and white pepper.
7) Lower the heat and simmer for 15 minutes.
8) Transfer the tomato mixture into electric blender and blend a few seconds.
9) Strain the tomato mixture through a fine sieve.

FINALIZING
10) Stream the strained tomato mixture in saucepan.
11) Stir in the cream and bring to boil.
12) Reduce the heat and simmer 2 to 3 minutes.
13) When ready to serve, stir in remaining butter, bit by bit.

SERVING
14) Serve the Potage Creme De Tomates piping hot garnished with chopped parsley if desired.
