Easy Shrimp Bisque
|Butter||60 Milliliter (4 Tablespoon)|
|Carrot||1 , pared and diced small|
|Celery stalk||1 , diced small|
|Shallot||1 , chopped|
|Shrimp||12 Large, unpeeled|
|Chopped chives||1 Teaspoon|
|Flour||75 Milliliter (5 Tablespoon)|
|Hot fish stock||1 Liter (4 Cups)|
|Hot light cream||125 Milliliter (1/2 Cup)|
Place butter, vegetables, shallot, shrimp, salt and pepper in casserole.
Cover and microwave 8 minutes.
Remove shrimp from casserole and shell.
Set shrimp and shells aside.
Add seasonings and flour to vegetables in casserole; mix well.
Place shrimp shells and fish stock in casserole.
Cover and microwave 15 minutes.
Pass mixture through sieve using pestle and pour back into casserole.
Chop shrimp and stir into soup.
Add cream and season to taste.
Microwave 2 minutes uncovered.
