Sunny Citrus Souffle
|Boiling water||2 Cup (32 tbs)|
|Lemon flavored gelatin||6 Ounce (2 Packages)|
|Lemon lime carbonated beverage||1 3⁄4 Cup (28 tbs)|
|Grated lemon peel||1 Teaspoon|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Chilled whipping cream||2 Cup (32 tbs), whipped|
|Yellow food coloring||3 Drop (Adjust Quantity As Needed)|
1. Tie an aluminum foil collar around top of a 1 1/2-quart souffle dish. Set aside.
2. Pour boiling water over gelatin in a bowl and stir until dissolved. Add carbonated beverage and lemon peel and juice; blend thoroughly. Chill until mixture is slightly thickened.
3. Beat gelatin until foamy. Fold in whipped cream and food coloring. Spoon mixture into prepared souffle dish. Chill until firm (about 3 hours).
4. Carefully remove foil collar.
