|Frozen chopped spinach||10 Ounce (1 Package)|
|Ricotta cheese||1⁄2 Cup (8 tbs)|
|Evaporated skim milk||3 Tablespoon|
|Eggs||2 , slightly beaten|
|Basic crepes||8 (Prepared, See Index)|
|Margarine||2 Teaspoon, melted|
|Grated parmesan cheese||3 Tablespoon|
1. Preheat oven to 350° F.
2. Cook spinach according to package directions. Drain thoroughly.
3. Add salt, pepper, ricotta cheese, milk, eggs, and nutmeg.
4. Put 1/4 cup filling in center of each crepe; overlap sides.
5. Place seam side down in 13- X 9-inch baking dish. Brush with margarine. Sprinkle with Parmesan cheese.
6. Heat for 20 minutes.
