Elegant Chicken Crepes
|Crepes||12 (Calorie Counter's)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Skim milk||1 Cup (16 tbs)|
|Shredded process swiss cheese||4 Ounce (1 Cup)|
|Canned sliced mushrooms||4 Ounce, drained (1 Can)|
|Finely chopped cooked chicken||2 Cup (32 tbs)|
|Frozen chopped broccoli||10 Ounce, cooked, drained (1 Package)|
Prepare Calorie Counter's Crepes; set aside.
In saucepan combine onion and water.
Cook, covered, 5 minutes.
Do not drain.
Combine milk, cornstarch, salt, and pepper; add to onion.
Cook and stir till thickened and bubbly.
Cook and stir 1 minute more.
Add cheese; stir to melt.
Reserve 1/2 cup of the cheese mixture.
Add mushrooms to remaining cheese mixture.
Cover; set aside the cheese-mushroom mixture.
For filling, combine cooked chicken, cooked broccoli, and the 1/2 cup reserved cheese mixture.
Spoon about 1/4 cup filling on the unbrowned side of each crepe; roll up.
Arrange crepes in a 13 x 9 x 2 inch baking dish.
Cover and bake in a 350Â° oven for 20 minutes.
Meanwhile, heat cheese-mushroom mixture in the saucepan; serve over crepes.
