Peas French Style
|White onions||8 Small, peeled (Baby White Onions)|
|Peas||2 Pound, shelled|
|Boston lettuce head||1 Small, shredded|
|Fresh pepper||To Taste|
Bring 1 1/2 cups water to a boil.
Add the onions and parboil them for 5 minutes.
Add the peas, 1 tablespoon of butter, and a pinch of sugar.
Cover with the lettuce and cook, covered, over low heat until the peas are tender, about 15 minutes.
While the peas are cooking, make a beurre manie by blending together 1 tablespoon of butter and the flour.
When the peas are tender, add the beurre manie in small bits and stir until the liquid has thickened.
Season with salt and pepper.
