Batter Fried Crispy Chicken

Ingredients
  Broiler fryer chicken 3 , cut into serving pieces
  Water 1⁄4 Cup (4 tbs)
  Salt 2 Teaspoon
  Salad oil 1 Quart (For Deep Frying)
Directions

1. Place chicken pieces in baking pan; add water and sprinkle with salt. Cover with foil; bake in moderate oven f375°) 45 minutes. Remove chicken pieces from liquid; dry well. If desired, remove skin.
2. Heat salad oil to 350° in a heavy 3-quart saucepan.
3. Dip chicken pieces in Batter; drain off excess. Fry, 2 or 3 pieces at a time, until golden brown, about 3 minutes. Drain on paper towels.
