Lemon Broiled Chicken's picture
  Broiler fryer split 3
  Lime juice 1⁄2 Cup (8 tbs)
  Vegetable oil 1⁄2 Cup (8 tbs)
  Onion 1 Tablespoon, grated
  Tarragon 2 Teaspoon, crushed
  Seasoned salt 1 Teaspoon
  Seasoned pepper 1⁄4 Teaspoon

1. Wash chickens; pat dry. Place, skin side down, on rack in broiler pan.
2. Mix lime juice, vegetable oil, onion, tarragon, and seasoned salt and pepper in a small bowl. Brush generously over chickens.
3. Broil, turning every 10 minutes and brushing with more lime mixture, 40 minutes, or until the chickens are tender and richly browned. Remove to a heated large serving platter.
