Dill & Tomatoes Chicken
|Broiler fryer chicken||1 , cut into serving size pieces|
|Salt||1 1⁄2 Teaspoon (Divided)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chopped celery with leaves||1⁄2 Cup (8 tbs)|
|Tomatoes||4 Medium, peeled and chopped|
|Snipped fresh dill/1 tablespoon dried dill weed||1⁄4 Cup (4 tbs)|
|Grated parmesan cheese||1 Tablespoon|
1. Sprinkle chicken with 1 teaspoon of the salt and pepper. Heat butter in a large skillet. Add chicken and brown on all sides. Remove from skillet.
2. Add onion and celery; cook until tender. Add tomatoes and dill; sprinkle with remaining 1/2 teaspoon salt. Add chicken; spoon some of the tomato mixture over chicken
3. Cover; simmer 30 minutes, until chicken is tender.
