Double Mushroom Consomme
|Dried mushrooms||2 Large, softened in water to cover with a pinch of sugar|
|Chicken broth/Beef / chicken and veal broth||6 Cup (96 tbs) (Beef And Or Veal Broth)|
|Green onion with tops||3 , slivered|
|Mushrooms||1⁄2 Pound, minced|
|Fresh lemon juice||1|
|Dry white wine||1 Ounce|
|White pepper||To Taste|
|Sliced mushrooms||1 Cup (16 tbs), rubbed with fresh lemon juice|
Dice softened dried mushrooms and combine with broth, green onions and fresh mush rooms.
Cover, bring to boil, lower heat and simmer 45 minutes.
Strain, pushing as much pulp through sieve as possible.
Season with lemon juice, wine, salt and pepper and garnish with sliced mushrooms.
