Spice Baked Chicken With Gravy

Ingredients
  Chicken breasts 3
  Butter/Margarine 4 Tablespoon
  Onion 1 Small, grated
  Ground coriander 1 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Chili powder 1⁄2 Teaspoon
  Lemon juice 1 Tablespoon
  Pan gravy 1⁄2 Cup (8 tbs)
Directions

1. Halve chicken breasts; remove skin, if you wish; then cut meat in one piece from bones.
2. Melt butter or margarine in a shallow baking pan; stir in seasonings.
3. Roll chicken in mixture to coat well, then arrange in a single layer in same pan. Bake in moderate oven (350°) 30 minutes; turn.
4. Continue baking, basting several times with buttery liquid in pan, 30 minutes longer, or until chicken is tender. Serve with Pan Gravy (for recipe, turn to chapter on Gravies).
