French Tomato Tart

This is Viviane's version of a tart recipe from Provence (South of France). It's simple, light and delicious and has the uncommon addition of Dijon Mustard spread directly onto the base. It's a childhood favourite.
Ingredients
  Flour 250 Gram
  Olive oil 1 Small
  Lukewarm water 1 Small
  Tomatoes 2⁄3 Large
  Dijon mustard 1 Tablespoon (Enouhgh For A Thin Layer)
  Grated cheese 150 Gram
  Dried basil 1 Tablespoon
  Salt To Taste
  Pepper To Taste
