Sweet Pepper Coulis
|Butter||30 Milliliter (2 Tablespoons)|
|Green bell pepper||1 , cut into strips|
|Sweet red pepper||1 , cut into strips|
|Onion||1 , chopped|
|Potatoes||60 Milliliter, diced (1/4 Cup)|
|Garlic||1 Clove (5 gm), finley sliced|
|Vegetable juice||80 Milliliter (1/3 Cup)|
|Chicken stock||160 Milliliter (2/3 Cup)|
– In a saucepan, melt butter and saute pep-pers, garlic, onion and potatoes without browning. Pour vegetable juice into mixture along with chicken stock. Season with salt, pepper and paprika, and simmer for 20 minutes.
– Run mixture through blender, then return to saucepan and cook for 5 minutes.
– Adjust seasoning, then pour through sieve and serve.
