Tamarillo Ratatouille

This Tamarillo Ratatouille is definitely a keeper. Tamarillo Ratatouille turns out beautiful each time I make it. A great one to make!
  Chicken broth 355 Milliliter (1 1/2 Cups)
  Eggplant 1 Small, peeled and diced
  Tomatillos 4 , peeled and diced
  Sliced mushrooms 355 Milliliter (1 1/2 Cups)
  Bell pepper 1 , chopped (Red Golden/Orange)
  Elephant garlic/3 cloves regular garlic 1 Clove (5 gm), minced
  Basil 2 Tablespoon, chopped (30 Milliliter)
  Grated parmesan cheese 2 Tablespoon (30 Milliliter)
  Salt To Taste
  Pepper To Taste

In a large saucepan or Dutch oven, combine broth, eggplant, tamarillos, mushrooms, bell pepper, garlic, basil and oregano.
Bring mixture to a boil; reduce heat.
Simmer, partially covered, for 30 minutes or until vegetables are tender.
Season to taste.
